A hidden-away restaurant where you can eat handmade pasta made using wheat and vegetables grown in Tobetsu on the outskirts of Sapporo.

A small restaurant on a hill in the town of Tobetsu on the outskirts of Sapporo. Chef Arisawa, who was trained in various parts of Italy, serves dishes prepared using wheat and vegetables produced in Tobetsu. Most noteworthy is the hand-made pasta, made every morning from “Yumechikara” wheat produced in Northern Ishikari, with the amount of water adjusted according to the weather. With plenty of body and the perfect twist unique to hand-made pasta, it is a splendid dish which goes really well with sauce. At lunchtime there is the pasta of the day, such as the short “Strozzapreti” pasta made with seasonal vegetables such as asparagus purchased from contracted farmers, and in summer, generous salads made only with vegetables grown in Tobetsu also make an appearance. Try stepping out of Sapporo on a trip!
