What kind of food is Jingisukan?
Jingisukan meat is either lamb, which is soft and mild, or mutton, which is mature sheep meat with the rich flavor of sheep meat. There are also two styles to prepare Jingisukan meat. The meat seasoned by marinating sauce beforehand, and the meat unseasoned and dipped in sauce after it is grilled. Each restaurant or manufacturer has a different sauce flavor, a different way of cutting the meat. It is also interesting to note that each restaurant has its own unique way of enjoying the dish, such as stewing udon or ramen noodles in the sauce left in the skillet after eating meat. The meat is imported from New Zealand and Australia, and some restaurants also feature the rare Hokkaido Suffolk breed on their menus. How to best enjoy Jingisukan
Sometimes Jingisukan meat is seasoned, sometimes not. It depends on the restaurant and the family. Find your favorite way, and enjoy Jingisukan!
Seasoned meat
Heat the Jingisukan skillet and place the vegetables at the bottom of the dome, then place the meat in the center. The juice from the grilled meat will run down to the vegetables, doubling the flavor! You can also add leftover marinating sauce to simmer vegetables, or add udon noodles or ramen noodles.
Unseasoned meat
Melt some lard to coat the skillet not to burn food. (If lard is not provided, skip this process.) Cover the entire skillet with vegetables, and place the meat on top of them to steam. Make sure it is cooked well, dip it in the sauce and enjoy.
